about
Sardine is a charming restaurant and while it's in Petitenget next door to Seminyak the position is more in keeping with old Bali. Surprise. Housed in a striking bamboo structure overlooking a vista of endless rice paddies. The working rice fields which the restaurant faces are tended daily by the local farmers and the verdant field is surrounded by a herbaceous border of live bamboo and lily ponds.
Here the cuisine is as inspired as the decor.
Sundowners at sunset here is as good as it gets and there is a special small bites menu on offer.
cuisine
Sardine's "cuisine du soleil" is healthy, tasty, delectably light and perfectly suited to the warmer climate of Bali using both fresh seafood and homegrown organic vegetables.
The daily changing menu is dependent on the catch of the day which is picked out on an daily early morning pilgrimage to the fishing village of Jimbaran. Here Sardine's owners and chef have cultivated friendships with local fishermen so that they get the pick of the lot.
Vegetables, herbs and salads are sourced from their very own organic vegetable garden in the mountain village of Bedugul
chef
Highly creative executive Chef Michael Shaheen from California is a great addition to the Sardine team.
With his experience at both Spago and Cafe Pinot Hollywood in Los Angeles his kitchen team are blossoming under his influence.
Shaheen finds it a chefs dream being able to use organic produce from their own farm, work with the freshest seafood available on the day and then create a daily changing menu literally based around the seasonal and ingredients of the day.
creators
Pascal Chevillot is a 4th generation chef and restaurateur from Burgundy and his wife and partner Pika is a Slovenian artist and interior designer.
Many years ago they met in St. Martin in the Caribbean and fell in love. Moving together to Los Angeles where Pascal worked as a private Chef to the rich and famous Pika found work as an interior designer to the stars while continuing to paint and exhibit her work. (Ma's canvases adorn the restaurant).
After years of city living and while on holiday in Bali they fell in love again, only this time with the island. Missing their former life in the tropics in the Caribbean they followed their bliss and Sardine is the result of their wonderful journey together. Always delightful and always on the floor they are a meticulous team when it comes to looking after their clientele. Charming yet discreet no request is ever too small or too large at Sardine for the sophisticated yet down to earth owners.
boutique
Sardine's boutique is housed in a traditional Javanese gladak where you can bring some of Sardine's superb style home with you.
Home wares for sale include their signature custom made ceramics, glassware, linens and more.
Gift Certificates may be purchased in any amount
bar/lounge
A sophisticated bar fronts the restaurant, where frivolity and fun reign supreme. Here on the perfectly positioned barstools it's de rigueur for their international clientele to be casual but smart everyone at Sardine is somehow more stylish in the swank surroundings.
There is a fabulous choice of classic and exotic drinks including surprisingly delicious arak cocktails which is the local brew and a list of a firm favorites like the Bunga Rosella Martini (made from their own extract) or Arak Espresso Martini, frozen Raspberry and Passion fruit Daiquiri's, and Bali's traditional Arak Madu with honey and lime.
For a more chilled environment there is also the outdoor lounge area that overlooks the rice fields with comfortable daybeds where you can relax for coffee, cocktails and conversation under the stars.
bamboo
Sardine's breezy open air building with high vaulted ceilings is both dramatic and intimate. Inspired by John Hardy of PT Bamboo (www ibuku com) the use of bamboo was a result of the owners wanting to promote a material that is not only beautiful but that also has so many environmental benefits.
